  问 答 毛豆是什么? 毛豆是黄豆的“幼崽”,即尚未成熟的黄豆,因豆荚表面带绒毛而得名,又称菜用大豆、青毛豆、白毛豆等。口感以籽粒鼓满又鲜嫩者为最佳,豆荚较瘪者嫩有余而香味不足,豆荚过于鼓满者香味有余而不够鲜嫩。 毛豆最显著的营养特点有哪些? 毛豆的营养价值非常丰富,主要特点有三个 其一 蛋白质含量较高,为13.1%。同时,含脂肪5.0%,碳水化合物10.5%,如果按提供的能量计算,三者几近相当,比较“平衡”,这与其他蔬菜或鲜豆类差别明显。 其二 膳食纤维含量在常见食物中遥遥领先,仅不可溶性膳食纤维含量就高达4.0%,还有一些可溶性膳食纤维。因此是膳食纤维最好来源之一,有助通便和预防“三高”。 其三 钾含量为478毫克/100克,远超其他常见食物。尤其是其钾/钠的比值高达122.6,可谓遥遥领先。而膳食中钾/钠比值越高,则患高血压的风险越低。 怎么煮毛豆才能翠绿? L煮毛豆一般需要煮10多分钟,煮不熟不但影响口感,还有一定毒性。可是,如果不采取点“特殊”措施,这样煮熟的毛豆颜色发暗,不够翠绿鲜艳。特殊措施就是煮时加碱,或者煮之前用碱水泡20~30分钟。碱可以使叶绿素稳定,保持翠绿鲜艳,但会破坏维生素,很不可取。不加碱,水开后放入毛豆,旺火快煮快熟,缩短加热时间,可以使毛豆更翠绿一点儿。
